There was never any doubt in my mind that I would be having people over once my Baltimore Ravens made it to the Superbowl! The only real question, actually, was over what I would be preparing for the masses. The obvious choice for a Baltimore Ravens Superbowl is this:
Maryland Crab Tots from M&T Bank Stadium:
• 2 pounds tots
• 2 cups diced tomato
• 1/2 cup chopped scallions
• 2 cups shredded cheddar/Monterey Jack cheese
• 1 pound lump crab meat
• 1 batch crab dip (recipe below)
Preparation:
Preheat
broiler. Follow instructions on package for preparation of potato tots.
Place hot tots in large casserole dish. Drizzle crab dip over tots and
top with cheese. Add diced tomato and crabmeat. Place under broiler and remove once cheese has melted. Sprinkle with scallions and serve.
M&T Bank Stadium Crab Dip
• 1/2 cup diced onion
• 1/3 cup diced celery
• 3 tablespoons butter
• 1 pound cream cheese
• 4 ounces heavy cream
• 1 ½ teaspoon Old Bay
• 1 ½ teaspoon ranch powder mix
• 1 teaspoon Worcestershire sauce
Preparation:
Sweat
the onion and celery in butter until translucent. Add the heavy cream
and bring to a boil. Add the Old Bay, Worcestershire and ranch powder.
Remove from heat and add the cream cheese, a few small pieces at a time,
using a stick/wand mixer.

Being that Erin is very health-conscious and I am training for a
marathon, we decided to put a healthy spin on things, which ruled out the Maryland Crab Tots (although I will make these some day. Oh yes, I will). Erin and I tossed around a few ideas, and finally came up with:
Wings
Chili
French Fries
Sounds perfect for a Superbowl party? You bet. Here's what we are doing to make this a little bit healthier though:
Wings:
Sticky Miso Chicken Wings (

Buffalo Wings (with wing sauce and blue cheese from Whole Foods)
Jerk Chicken Wings (Penzey's Jerk rub)
Chili: I just put together a bunch of stuff I had around the house
1 bottle of Rolling Rock
1 12 oz can of Fire Roasted Tomatoes from Whole Foods
1 8 oz can of organic tomato paste (Whole Foods)
1 lb grass fed ground beef (
Hilltop Farms)
1 lb chicken sausage
2 cans of black beans
1 finely sliced red onion
season to your taste (I use chipotle and ancheaux chili powders, smoked cumin, salt, pepper and whatever else I'm in the mood for)

These
Spiced Potatoes from Food and Wine Mag have been a favorite of mine for years. They are that good. I've never made them and not have a guest fall in love with them (or maybe I just invite over people with good manners enough to do otherwise).
For the little people in attendance, I've put some sliced potatoes aside and will simply roast them seasoned with rosemary, peppercorn, and possibly some parmesan cheese.

Mardi Gras King Cake! I hope I get the golden baby, but let's face it, the only luck I really want is for Ray Lewis' last game to be a W.
I have to hand it to Whole Foods in Wilmington yesterday who did something really cool. They had a San Francisco v. Baltimore tasting competition (most of the tasting was beer!!). How creative and fun. Of course I voted for the Heavy Seas beer. We go way back. And then I picked up a case. I will share photos of our party meal once it's ready! Happy Superbowl. GO RAVENS!
